
I've been told all my life that we CAN'T see nor have we ever been able to see the far side of the Moon (aside from moon missions of course). But I have noticed that in Stellarium, it shows that 2025 years ago, we saw the full moon a bit differently than we do now. Can some astronomers shed some light on what I'm missing here?

That looks exactly the same as it does now. What are you talking about?

And you are asking why a computer program doesn’t meet your expectations (which it does…) so maybe ask the developers?
